How to make it

  • Cut pork into 1 inch cubes.
  • Add to pot with liquids and salt.
  • Bring to boil then simmer for 2 hours.
  • After 2 hours, turn up heat to med high and cook until all the liquid is evaporated, leaving the rendered fat.
  • Sear chunks in fat, making sure to brown (will be stringy and crispy).
  • Serve.
