Sev And Papri(fried Gram-flour Noodles And Crispy Thin Strips)

- 2 cup besan (Bengal gram flour) shopping list
- 1/2 tsp Ajwain (carom seeds) shopping list
- 1 tsp red chillies powder shopping list
- 1 tsp salt shopping list
- 1 1/2 tbsp hot oil shopping list
- 3 fl.oz. water shopping list
- oil for deep-frying shopping list
How to make it
- Sieve the gram flour into a bowl and add ajwain,chilli powder and salt. See Photo
- Dribble in hot oil and then gradually add water.
- Mix to a stiff paste (Do not be tempted to add more water this is meant to be a stiff paste) See Photo
- Heat the oil over a medium flame ( test it with a small bit of dough first)
- Fill the sev machine with a portion of dough. See Photo
- Holding the utensil over the hot oil, force the mixture through the holes by turning the handle. See Photo
- As soon as noodles fall, slowly move the machine in a circular motion so that they do not stick together. See Photo
- Fry both sides until crisp and lightly browned.
- Remove and drain on a paper towel.Break into pieces
- Store in an air-tight container.
- Serve sev as a snack.
