Spiced Vegetable with Couscous

- For the vegetables...... shopping list
- 250g pumpkin, chopped shopping list
- 2 tablespoons oil shopping list
- 1 medium onion, sliced shopping list
- 2 cloves garlic, sliced shopping list
- 2 teaspoons cumin seeds shopping list
- 1 teaspoon coriander seeds shopping list
- pinch ground chilli shopping list
- ½ medium eggplant, chopped shopping list
- 1 medium red capsicum, chopped shopping list
- 3 medium tomatoes, peeled, seeded, chopped shopping list
- 3 small zucchini, chopped shopping list
- 80ml (1/3 cup) tomato paste shopping list
- 375ml (1½ cups) water shopping list
- 1 vegetable stock cube shopping list
- 310g can chick peas, rinsed, drained shopping list
- 1 tablespoon chopped fresh oregano shopping list
- For the couscous...... shopping list
- 500ml (2 cups) water shopping list
- 350g (2 cups) couscous shopping list
- 75g butter shopping list
- 1 tablespoon chopped fresh mint shopping list
- ½ teaspoon garam masala shopping list
How to make it
- For the Vegetables.....
- Boil, steam or microwave pumpkin until tender; drain.
- Heat oil in pan, add onion and garlic, cook, stirring, until onion is soft.
- Add seeds and chilli, cook, stirring, until fragrant.
- Add eggplant, capsicum and tomatoes, cook, stirring, 3 minutes.
- Add zucchini and combined paste, water and crumbled stock cube, simmer, covered, about 10 minutes or until vegetables are tender.
- Stir in pumpkin, chick peas and oregano, simmer, uncovered, until heated through.
- For the Couscous......
- Boil water in pan, add couscous, remove from heat, stand 3 minutes.
- Add butter, stir over heat until butter is melted and grains are coated; stir in mint and garam masala.
- Serve vegetables over a platter of Couscous.
