How to make it

  • Heat the oil in a saucepan. Cook the onion over a medium heat for 5-6 minutes until softened
  • Add the garlic and cook for a further minute
  • Stir in three quarters of the petits pois, then pour in the stock and add the mixed herbs
  • Bring to the boil and simmer for 10-12 minutes
  • Meanwhile, grill the bacon until crisp
  • Allow the soup to cool for a few minutes, then transfer carefully to a food processor and mix until smooth
  • Return the soup to the pan and add the remaining petits pois
  • Bring to the boil and simmer for 2 minutes or until the petits pois are tender
  • Season to taste, and then stir in the butter (if using)
  • Break the bacon into pieces and add a quarter of it to the soup
  • Pour into bowls and scatter the remaining bacon over the top
