How to make it

  • Dissolve jell-o in hot water; when dissolved add marshmallows and stir till melted; remove from heat. Stir into a 13x9 pan and stir in pineapple juice. Chill until partially set.
  • Add remaining ingredients and allow it to completely set.
  • For topping: cook sugar, eggs, and lemon juice over a very low heat; stirring constantly until thick. When cooled, fold in Cool Whip and spread on top of the jell-o mixture. Refrigerate until ready to serve.

    Joyce, that reminds me of one I found for "Funeral Potatoes" on the AllRecipes site. It was so named because the contributor mostly remembered it from attending funeral dinners.
