Heavenly Salad

- 6 oz lemon jell-o shopping list
- 1 cup hot water shopping list
- 1 1/2 cups marshmallows, mini shopping list
- 9 oz crushed pineapple, reserve juice shopping list
- 6 oz reserved juice -- add water if needed to make the full amount shopping list
- 2 lg apples, cored, diced, but NOT peeled shopping list
- 3/4 cup pecan pieces shopping list
- TOPPING: shopping list
- 2 eggs shopping list
- 3/4 cup sugar shopping list
- 2 TBS fresh lemon juice shopping list
- 1 3/4 cup Cool Whip shopping list
How to make it
- Dissolve jell-o in hot water; when dissolved add marshmallows and stir till melted; remove from heat. Stir into a 13x9 pan and stir in pineapple juice. Chill until partially set.
- Add remaining ingredients and allow it to completely set.
- For topping: cook sugar, eggs, and lemon juice over a very low heat; stirring constantly until thick. When cooled, fold in Cool Whip and spread on top of the jell-o mixture. Refrigerate until ready to serve.
