Cilantro Chicken

- 4 boneless skinless chicken breasts shopping list
- 2 garlic cloves shopping list
- 1 fresh green chilie, deseeded shopping list
- 3/4 inch/2 cm piece of fresh ginger root shopping list
- 4 tablespoons chopped fresh cilantro shopping list
- rind of 1 lime, finely grated shopping list
- 3 tablespoons lime juice shopping list
- 2 tablespoons light soy sauce shopping list
- 1 tablespoon sugar shopping list
- 3/4 cup coconut milk shopping list
How to make it
- 1. Cut 3 deep slashes in the boneless chicken breasts.
- 2. Put the garlic, chile, ginger, cilantro, lime rind and juice, soy sauce, sugar and coconut milk in a food processor and process to a smoth puree.
- 3. Put the chicken breasts into a glass baking dish and cover with the the pureed sauce and then cover with plastic wrap and place in fridge.
- 4. Marinade the chicken for about 1 hour at least then when ready to cook remove the breasts from the marinade and place in another dish and spoon some of the sauce on each breast and place in the oven 350 F for about 1 hour and check to see if chicken is done times may vary.
- 5. Put the remaining sauce in a pan and bring to the boil and then simmer until ready to serve, stirring occassionally.
