How to make it

  • Wash squash and halve lengthwise; scoop out seeds and scrape out fibers. Put halved squash into baking dish, cut side down. (Two medium size acorn squash halves fit perfectly in a round cake pan.) Add about 1/2 inch of boiling water to the dish See Photo. Tent with foil. Bake at 350° for 30 minutes.
  • While squash is baking, prepare the apple stuffing. Peel, core, and dice the apples. Sprinkle diced apples with lemon juice. Mix melted butter and the honey, then pour over apples and combine.
  • Turn acorn squash halves cut side up and sprinkle with salt. Fill each acorn squash half with apple and honey mixture. Sprinkle with nutmeg. Continue baking uncovered for 30 minutes, until squash and apples are tender.
  • Serve the squash halves as-is OR scoop out the squash & apple stuffing and mash together.
The halves fit perfectly in a round baking pan.   Close

    Lovely! I bet that was a big hit. I have not tried acorn squash but I love squash and fruit together and know I would enjoy this.
