How to make it

  • Heat oven to 350' Adjust rack to middle position. Coat 2 cookie sheets lightly with no stick spray.
  • Beat brown sugar and shortening in med. bowl with electric mixer at mesd. speed for 2 mins or till fluffy. Scrape down sides of bowl. Add egg yolks,water,vanilla and salt. Beat till well combined. Add flour on low until well blended.
  • Beat egg whites in shallow bowl till foamy. Place pecans in seperate shallow bowl. Measure about 2 tsp of dough for eack cookie. Form into balls by rolling between your palms. Dip each ball into egg whites,then roll in pecans. Place on prepared cookie sheets. Using back of tsp. or your thumb,make a rounded indentation in top of each cookie.
  • Bake 10 mins. Remove from oven.It may be necessary to create indentation again with spoon.
  • Place about 1 tsp preserves or jam into into indentation of each cookie. Bake additional 5 to 7 mins or till lightly browned.
  • Remove to wire rack to cool completely.

    These are so good and much easier than they look. My husband LOVED them, and wants me to buy 20 new jams and jellies to experiment with! All 7 kids liked them, too! (amazing feat in itself)
