Black Bean Soup

- 2 (15 ounce) cans black beans, drained and rinsed shopping list
- 1 1/2 cups vegetable broth shopping list
- 1 teaspoon ground cumin shopping list
- 4 tablespoons sour cream shopping list
- 2 tablespoons thinly sliced green onion shopping list
- 1 1/2 teaspoons garlic, minced shopping list
- 1/2 cup sherry shopping list
- 2 tablespoons lime juice shopping list
How to make it
- 1. Saute the onions and garlic in the pan first.
- 2. In a food processor blend one can of the black beans and the cumin, broth, onions and garlic until well blended.
- 3. Heat the mixture in the pan, adding the sherry, and lime juice and the remaining can of the black beans that were left whole.
- 4. Serve in individual bowls and top with some sour cream or topping of your choice.
- I use parsnip chips for my soups.
