Turkey Thai Sticks

- 1 pound ground white turkey shopping list
- 3 baby carrots shopping list
- 1/4 cup of coconut milk shopping list
- 1 small piece of fresh ginger shopping list
- 1/4 of a small onion shopping list
- 1/4 cup of chopped fresh cilantro shopping list
- 1 tablespoon cumin shopping list
- 1 tablespoon turmeric shopping list
- 2 green onions finely chopped shopping list
- pinch of salt shopping list
How to make it
- Place the first five ingredients in a food processor and pulse until most all of the vegetables are finely chopped.
- In a bowl add the ground turkey, contents of the food processor, the finely chopped cilantro and green onions as well as the cumin, turmeric and the salt.
- Using two wooden skewers per chicken stick, take a large meatball sized portion of the turkey mixture and form around the sticks in a long flat shape that looks like a Twinkie or a log. Oil a broiler pan and place the skewered turkey logs on the broiler pan.
- Bake in a 400 degree oven for approximately 30 minutes or until the top of the turkey logs start to turn a nice golden color.
- Serve over a bed of Jasmine curry rice with a spicy peanut sauce.
