Salmon Quiche

- For the Pastry.... shopping list
- 125gm margarine shopping list
- 1/2 cup plain flour shopping list
- 1/4 tsp salt shopping list
- 1/2 cup self raising flour shopping list
- 1 egg, beaten shopping list
- 1/4 cup water (approx) shopping list
- For the FIlling..... shopping list
- 220gm can flaked salmon shopping list
- 1/2 cup chopped shallots, green tops included shopping list
- 1 sliced tomato shopping list
- 1 cup milk shopping list
- 1 cup grated cheese shopping list
- 3 eggs shopping list
- 1 cup cream shopping list
How to make it
- For the Pastry...
- Sift flour and salt into a bowl and rub in margarine until mixture resembles bread crumbs.
- Mix egg with water and stir into flour - work into a firm dough, adding more water if necessary.
- Roll onto a floured board and line a 24cm quiche dish.
- Place in refrigerator for one hour.
- For the Filling.....
- Spread the flaked salmon, grated cheese and shallots over the chilled pastry base.
- Beat eggs, add milk, cream, salt and pepper and gently pour over filling.
- Place sliced tomato evenly on top and bake approximately 45 mins in a 160°C oven.
- Serving Suggestion......
- Serve with a tossed salad
- Leftover Potential.....
- Can be eaten cold, or reheated easily for a tasty snack
