How to make it

  • For the Pastry...
  • Sift flour and salt into a bowl and rub in margarine until mixture resembles bread crumbs.
  • Mix egg with water and stir into flour - work into a firm dough, adding more water if necessary.
  • Roll onto a floured board and line a 24cm quiche dish.
  • Place in refrigerator for one hour.
  • For the Filling.....
  • Spread the flaked salmon, grated cheese and shallots over the chilled pastry base.
  • Beat eggs, add milk, cream, salt and pepper and gently pour over filling.
  • Place sliced tomato evenly on top and bake approximately 45 mins in a 160°C oven.
  • Serving Suggestion......
  • Serve with a tossed salad
  • Leftover Potential.....
  • Can be eaten cold, or reheated easily for a tasty snack

    may be I added too much milk and cream (although I did according to the recipe), but in result I got something in between omelet and quiche.
    But still it s very yummy :) and i used fresh salmon and doubled the cooking time (just it was far from ready in 45 minutes)

    Sounds great, but as a lazy person I'd probably use a premade pieshell. something I will definitly try
