Ingredients
  • For the Pastry....
  • 125gm margarine
  • 1/2 cup plain flour
  • 1/4 tsp salt
  • 1/2 cup self raising flour
  • 1 egg, beaten
  • 1/4 cup water (approx)
  • For the FIlling.....
  • 220gm can flaked salmon
  • 1/2 cup chopped shallots, green tops included
  • 1 sliced tomato
  • 1 cup milk
  • 1 cup grated cheese
  • 3 eggs
  • 1 cup cream

Directions
  1. For the Pastry...
  2. Sift flour and salt into a bowl and rub in margarine until mixture resembles bread crumbs.
  3. Mix egg with water and stir into flour - work into a firm dough, adding more water if necessary.
  4. Roll onto a floured board and line a 24cm quiche dish.
  5. Place in refrigerator for one hour.
  6. For the Filling.....
  7. Spread the flaked salmon, grated cheese and shallots over the chilled pastry base.
  8. Beat eggs, add milk, cream, salt and pepper and gently pour over filling.
  9. Place sliced tomato evenly on top and bake approximately 45 mins in a 160°C oven.
  10. Serving Suggestion......
  11. Serve with a tossed salad
  12. Leftover Potential.....
  13. Can be eaten cold, or reheated easily for a tasty snack

Sounds great, but as a lazy person I'd probably use a premade pieshell. something I will definitly try


May be I added too much milk and cream (although I did according to the recipe), but in result I got something in between omelet and quiche.
But still it s very yummy :) and i used fresh salmon and doubled the cooking time (just it was far from ready in 45 minutes)
