Authentic Frijoles

- 2 Cups pinto beans shopping list
- 12 Cups of water shopping list
- ham hock, if not available, Grease from 1 package of bacon shopping list
- 3-4 Bay leafs shopping list
- Several Dry hot red chili peppers or pequin peppers shopping list
- 1 Tablespoon white vinegar shopping list
- 2-4 Tablespoons of chili powder shopping list
- 1 Tablespoon oregano shopping list
- 1 Tablespoon of black pepper shopping list
- 1 Teaspoon of cumin seeds shopping list
- 5-6 cloves of garlic, crushed shopping list
- few more peppers if desired shopping list
- 1 Teaspoon of baking powder shopping list
- 1/2 Teaspoon of sugar shopping list
- 1/2 teaspoon of salt shopping list
How to make it
- 1) Rinse pinto beans well, there will be rocks sticks you name it in there, make sure they are rinsed well
- 2) Soak the beans, ham hock or grease, bay leafs and chilies overnight in the 12 cups of water
- 3) Bring to a simmer very slowly then add the rest of the ingredients
- (Use a large knife to crush the garlic and cumin seeds before you add)
- 4) Simmer for 2 to 3 hours until bean are very tender stirring occasionally so the beans do not stick to bottom
- 5) Remove from heat, take out bay leafs and stir in baking powder, sugar and salt
- 6) Serve with some cheese on top and enjoy
