How to make it

  • 1) Rinse pinto beans well, there will be rocks sticks you name it in there, make sure they are rinsed well
  • 2) Soak the beans, ham hock or grease, bay leafs and chilies overnight in the 12 cups of water
  • 3) Bring to a simmer very slowly then add the rest of the ingredients
  • (Use a large knife to crush the garlic and cumin seeds before you add)
  • 4) Simmer for 2 to 3 hours until bean are very tender stirring occasionally so the beans do not stick to bottom
  • 5) Remove from heat, take out bay leafs and stir in baking powder, sugar and salt
  • 6) Serve with some cheese on top and enjoy
