How to make it

  • Preheat oven at 325 degrees.
  • In a bowl combine flour, baking soda, salt and spices.
  • In a mixing bowl, combine sugar and oil. Beat in eggs and vanilla, then stir in apples, raisins and pecans. Mixture will be thick.
  • Add the dry ingredients and mix until well blended.
  • Grease 2 9x5 loaf pans and line with wax paper. (If you are using nonstick pans spraying bottom with nonstick cooking spray is fine.)
  • Bake at 50 to 60 minutes or until cake tester inserted in center comes out clean.
  • Note: For a lower calorie bread: substitute 1/2 cup of applesauce for 1/2 cup of oil, 1 cup of splenda for baking for 1 cup of sugar.
