Southwest Chicken

- 2 pounds chicken breast cut into chunks shopping list
- 1 16 ounce jar chunky salsa (I use medium) shopping list
- 1 can black beans - drained and rinsed shopping list
- 1 can sweet corn - drained and rinsed shopping list
- 1 can red chili beans (I use medium) shopping list
- 1 cup shredded cheese - I like to use Kroger's habenero cheese, but cheddar works well shopping list
- Splash of lime juice shopping list
- Shot of tequila (this is optional, but I find it has great flavor) shopping list
- Tabasco sauce (also optional) shopping list
How to make it
- In crock pot, combine corn, black beans, chili beans and half the jar of salsa. (If using tequila and lime, add it here.)
- Layer chicken on top of corn mixture.
- Pour the remaining salsa over the chicken.
- Cover, and turn crock pot on. You can put it on high for 4 hours or Low for 8 hours.
- About 10 minutes before servering sprinkle cheese over the dish and let it melt.
- Serve with rice or by itself. Also is very good with cornbread.
