How to make it

  • Cut potatoes into small wedges (6 or more per potato)
  • Heat oil over medium heat until drops of water "dance" on top.
  • Cook potatoes in batches (depending on size of pan using). They should be submerged in the oil completely.
  • Cook until outside turns golden brown.
  • Remove with slotted spoon onto paper towel covered plate.
  • Sprinkle with salt and pepper mix. Let cool 30 sec and sprinkle with some cheese.
  • Repeat these last steps for all the batches layering the potatoes on the plate.
