How to make it

  • Simmer the veggie broth just below a boil.
  • Add 1 tsp. (or to taste - I added a 3 tbs by the end but I like it spicy) - chili paste
  • Add the mushrooms - sliced or diced.
  • Add the peppers - 2" thin long slices
  • Add the Pineapple.
  • Add the serrano chili
  • Stir in the lime juice + zest
  • I cooked it to just about boiling, then cooked it for a few more hours at low. Depending on how slow cooked you like to combine things, you could cook this for 1-4 hours.
  • * Keep adding chili paste until it is spicy enough for your taste.
  • Garnish with cilantro just before serving.
