How to make it

  • Sort the beans for any rocks and rinse in cold water.
  • Add the beans to a large pot and add enough water to cover them. Let the beans come to a rapid boil for about 2 min.
  • Remove from the heat and cover for 1 hour.
  • Rinse again and set a side.
  • In a large pot or dutch oven on medium high heat, add the bacon, onion, and garlic. Saute till onions are semi translucent.
  • Add the beans, water, and the bay leaves. Let simmer for about 30-40 min till beans are done.
  • Serve over rice and a lot of hot sauce!
