Tortilla Appalachiañola

Tortila Española is something you should know how to make. There are many different versions; this is the one that most appeals to me when I'm feeling lazy. Feel free to experiment!
Ingredients
- potatoes - you have several different options here. i prefer frozen ass, diced potatoes with onion and pepper. feel free to use another kind or even fresh (you will have to cook them before use in this recipe). shopping list
- ≥5 eggs shopping list
- 3 green onions shopping list
- *1/4 c. pickled jalapeños shopping list
- *sausage- lean patties or crumbles work best. i'm a fan of pork sausage, but grease does not sit well atop this dish. shopping list
- *2-3 tbs salsa, beaten in with the eggs shopping list
- *= optional ingredients shopping list
How to make it
- layer potatoes onto the bottom of a casserole dish See Photo
- sprinkle chopped (i use kitchen shears, best investment ever) green onion over the potatoes
- beat eggs and pour over potatoes (use enough so the potatoes are at least halfway covered) See Photo. feel free to include some salsa.
- if desired, add sausage and/or pickled peppers
- if using a shallow pan, bake on 350 for 30 min. or until eggs are firmly set
- if using a deep pan, bake at lower temp. for 30+ min. until eggs are set
- serve with cheese sauce or yogurt if desired; also pairs well with kraut.
