Chilled Corn Side Salad

- 4 cups corn (fresh if possible, but frozen works well also) shopping list
- 1 cup water shopping list
- 1 cup celery, diced into 1/4" pieces shopping list
- 1&1/3 cup of combined green, yellow and red peppers, diced to 1/4" pieces shopping list
- 1/2 c. thinly sliced scallions, green part shopping list
- 1/2 cup fresh parsley, minced shopping list
- 1/2 cup fresh basil, minced shopping list
- 1/2 cup balsamic vinegar shopping list
- 1 TBsp extra virgin olive oil shopping list
- 1/2 tsp kosher or sea salt shopping list
- 1/4 tsp pepper shopping list
How to make it
- Simmer corn in water until tender.
- Combine all ingredients and toss well to coat.
- Cover and chill at least 4 hours, stirring periodically.
- Toss gently before serving and garnish with sprig of fresh basil.
