Beer Nuts Veggie Casserole

- 1 1/2 cups beer nuts peanuts (1 cup whole, 1/2 cup chopped) shopping list
- 2 cups buttered breadcrumbs shopping list
- 1/4 lb cheddar cheese shopping list
- 1/4 lb swiss cheese shopping list
- 1 T flour shopping list
- 2 T bacon drippings or vegetable oil shopping list
- 1 medium onion, diced shopping list
- 1 cup cooked ham, diced shopping list
- 3 medium zucchini, cut into 1/2'' cubes shopping list
- 3 fresh ripe tomatoes, cut into eight sections shopping list
- 1 tsp salt shopping list
- 1/4 tsp pepper shopping list
How to make it
- Combine 1/2 cup chopped BEER NUTS with butter breadcrumbs; set aside. Cut cheese into 1/2" cubes and coat with flour; set aside. Saute onion in bacon drippings until slightly tender. Add ham and saute. Add zucchini and saute just until crisp. Add 1 cup whole BEER NUTS, coated cheese, tomatoes and seasonings to zucchini mixture. Remove from heat. Line a greased casserole dish with 1 cup of the BEER NUTS/breadcrumbs mixture. Pour zucchini mixture into the casserole over the bread crumbs. Top with remaining BEER NUTS/breadcrumb mixture. Bake at 375 for 25-30 minutes.
