Black Bean Croquettes

- 2 (15 ounce) cans of black beans , rinsed shopping list
- 1 teaspoon ground cumin shopping list
- 1 cuo corn kernals shopping list
- 1/4 cup plus 1/3 cup bread crumbs shopping list
- 2 cups finely chopped tomatoes shopping list
- 2 scallions sliced shopping list
- 1/4 cup chopped fresh cilantro shopping list
- 1 teaspoon chili powder shopping list
How to make it
- 1. Preheat oven to 425 degrees F and coat a baking sheet with cooking spray.
- 2. Mash the black beans and cumin with a fork in a large bowl until no whole beans remain. Stir in the corn and 1/4 cup of the bread crumbs.
- 3. Combine the tomatoes , scallions, cilantro 1/2 teaspoon chili powder in a bowl and add this to the black bean mixture.
- 4. Then shape into rounds and press into the bread crumbs and coat and then place on the baking sheet and bake for about 20 minutes or until golden brown and heated through.
