Sausage In Chili Sauce

- 1T olive oil shopping list
- 5-6 Cups diced tomatoes shopping list
- 1 medium onion, diced shopping list
- 1 dried cayenne pepper, crumbled or about 2t crushed red pepper shopping list
- 1/2t cinnamon shopping list
- 1/2t allspice shopping list
- 1/8t cloves shopping list
- 1 Cup brown sugar shopping list
- 1 Cup cider vinegar shopping list
- about 3 lbs Polish sausage (fresh or smoked) or similar sausage shopping list
How to make it
- Parboil & drain sausage if desired to remove some of the fat.
- In a dutch oven or large skillet heat the oil & saute onions until golden, stir in pepper, allspice. cloves & cinnamon. Add tomatoes, sugar & vinegar & stir thoroughly. Allow to boil for about 2 minutes while stirring.
- Reduce heat and simmer for at least 30 min. Cut sausage into serving sized pieces & add to sauce. Keep simmering another 30 minutes of so.
- Longer simmering is perfectly ok and will improve flavor. It is really good made the day before you need it and served after the flavors have blended.
