How to make it

  • Parboil & drain sausage if desired to remove some of the fat.
  • In a dutch oven or large skillet heat the oil & saute onions until golden, stir in pepper, allspice. cloves & cinnamon. Add tomatoes, sugar & vinegar & stir thoroughly. Allow to boil for about 2 minutes while stirring.
  • Reduce heat and simmer for at least 30 min. Cut sausage into serving sized pieces & add to sauce. Keep simmering another 30 minutes of so.
  • Longer simmering is perfectly ok and will improve flavor. It is really good made the day before you need it and served after the flavors have blended.

    I'm smoking some fresh sausage today. I can see this chili sauce and sausages and my big pot of brown rice as a future dinner this week.
