Banana Walnut Cake

Favourite recipe for banana cake. Good with cream cheese icing and toasted shredded coconut. Works well with bananas that are black. Don't throw out bananas, peel them and freeze them. This recipe works well with defrosted bananas.
Ingredients
- 125g butter shopping list
- 3/4 cup caster sugar shopping list
- 2 eggs shopping list
- 3 very ripe bananas, mashed with fork (approx. 3/4 cup) shopping list
- 1 tsp vanilla essence shopping list
- 1/2 cup chopped walnuts shopping list
- 3/4 SR flour shopping list
- 3/4 plain flour shopping list
- 1 tsp sodium bicarbonate shopping list
How to make it
- Cream butter and sugar until light and fluffy.
- Add eggs and beat until combined.
- Add vanilla and beat on high speed for further 2 minutes.
- Sift flours and soda together, add to bowl. Add in walnuts and mashed banana. Mix until incorporated. Mix on high speed for further 2 minutes, until light and fluffy.
- Spread in cake tin (20cm round suggested).
- Bake at 180˚C for 40 minutes.
