How to make it

  • Chop your mango and add it and the rest of the salsa ingredients and refrigerate for at least a half an hour.
  • I picked up a bottle of Honey Ginger Soy Marinade at Harris Teeter. Im sure you could look up a similar recipe to make it yourself. Marinate the salmon for at least an hour.
  • Spray a baking dish with cooking spray or add a little olive oil. Lay salmon skin down and sprinkle a little garlic, salt, and pepper. Pour enough white wine around the salmon to cover the bottom of the pan. Bake at 375 for 15-25. When the fish flakes with a fork it is done.
  • Serve with the mango salsa and rice.
  • I picked up some asian slaw and broccoli and bacon salad from Whole Foods that went really well.
