Baked Greek-style Chicken

- 3 lbs. chicken pieces of your choice, skin on shopping list
- 8 cloves minced garlic shopping list
- 2 tablespoons dried oregano shopping list
- 1 tablespoon kosher salt shopping list
- 2 teaspoons black pepper shopping list
- 1/3 cup olive oil shopping list
- 3 tablespoons butter, cut into small cubes shopping list
- 1 lemon, cut into fourths shopping list
- 1 1/2 cups water shopping list
How to make it
- Line bottom and sides of 9 X 13 baking dish with aluminum foil.
- Lay chicken pieces in pan. Sprinkle minced garlic, oregano, salt, and pepper. Drizzle with olive oil. Using hands, toss chicken pieces with spices and oil, turning to coat completely. Return chicken pieces to "skin side up" for baking. Cover with cubes of butter. Squeeze lemon pieces to extract juice over chicken. Toss squeezed lemon pieces into pan. Pour water into bottom of pan.
- Bake, uncovered, at 350 degrees for 75-90 minutes, until chicken is cooked through and juices run clear. (Time will vary depending on cut of chicken used).
- I came up with this recipe when I found chicken thighs on sale for 39 cents a pound, and needed to either freeze them or cook them. This recipe could also work well for lamb, come to think of it.
