Mushroom Barley Soup

- 2 T olive oil shopping list
- 2 MED. onions, CHOPPED shopping list
- 2 cloves garlic shopping list
- 2 PKG. BABY PORTABELLA mushrooms, WASHED, CHOPPED shopping list
- 1/4 C. flour ( I USED brown rice flour) shopping list
- 8 C. chicken broth shopping list
- 1 1/2 C. barley shopping list
- 2 bay leaves shopping list
- 1 T. tarragon shopping list
- 1 T. basil shopping list
- 2 T. sea salt shopping list
- 2 T. white pepper shopping list
How to make it
- Saute onions in oil til soft. Add garlic and spices. Add flour and mushrooms. Stir well, till flour is roux. Add chicken broth. Stir well. Add barley. Cook aprox. 60 min til barley is cooked.
