Pinto Bean Soup

- 4 cups cold water shopping list
- 1 1/4 cups dry pinto beans, sorted and cleaned shopping list
- 1 3/4 lbs ham hock shopping list
- 2 med potatoes, peeled, diced shopping list
- 2 med carrots, peeled, diced shopping list
- 1 lb beef shank shopping list
- 1 small onion, thinly sliced shopping list
- salt and pepper to taste shopping list
How to make it
- Sort and rinse beans; place in Dutch oven with water. Bring to boil; simmer for 2 minutes. Remove from heat; let stand 1 hour.
- Add beef shank, ham hock, onion, salt and pepper. Return to heat and return to a boil. Cover and simmer 1 1/2 hours, stirring occasionally.
- Remove bones; cut off meat and dice. Add meat, potatoes and carrots to soup. Cover; simmer 30 minutes. Season to taste.
