Easy Shrimp Creole

- 2 Lbs of Peeled and Devained shrimp shopping list
- 2 Red & 2 green bell peppers Chopped shopping list
- 1 Large onion shopping list
- 3 to 4 Stalks of celery Chopped shopping list
- 2 Large Cans of diced tomatoes shopping list
- 1-1/2 TBSP butter shopping list
- 1-1/2 TBSP of flour (All Purpose) shopping list
- 2 bay leaves shopping list
- Tony Chachere's or your Favorite cajun spice to Taste shopping list
- salt to Taste shopping list
How to make it
- Melt Butter in Stock Pot –on Medium High Heat
- Whisk in Flour to make light brown Roux
- Mix Garlic, Peppers & Onions into Roux and cook until peppers are slightly tender (about 3-5 minutes)
- Add in Cans of Tomatoes, 2 Bay Leaves, Salt, & Tony’s and reduce heat to medium low, simmer for 20 minutes. (you can leave it on simmer all day if you want – but 20 minutes is the minimum)
- 2-3 minutes before you’re ready to serve, add shrimp.
- Serve over Rice and a side of French Bread
- To reduce fat – replace butter with Olive Oil – Cook Veggies in Olive Oil. After you add tomatoes, mix 2 TBSP of Cornstarch in a half of a cup of water or chicken broth and add to Creole.
- Pairing Suggestions- Serve with a Big Glass of Sweet Tea or your favorite Savignon Blanc
