How to make it

  • Select melon with deep rind. Remove all green rind and pink meat. Cut remaining rind into 1" squares. Soak this over night or at least 8 hours in lime water. Drain fruit and place in preserving kettle. Cover with water and boil until easily pierced with a broom straw. This unsually takes about 2 hours. Drain and cool fruit and stick each piece with a clove. Dissolve sugar and vinegar and add one package of stick cinnamon. Boil 5-10 minutes. Add fruit. Cook until rind is spotted (about 2-2 1/2 hours). You may have to make more juice, using same proportion of sugar and vinegar; as fruit takes up some of juice. If necessary, cook extra juice about 20 minutes, boiling. Place in jars while hot and seal.
