7 Egg Bittersweet Cake And Filling

- 7 eggs, at room temperature shopping list
- 1 cup sugar shopping list
- 1/2 cup cocoa, sifted shopping list
- 1 tsp vanilla shopping list
- Filling: shopping list
- 1 pint whipping cream shopping list
- 1 tsp vanilla shopping list
- 5 TBS powdered sugar shopping list
- 4 TBS cocoa shopping list
How to make it
- Separate eggs and put whites aside in medium mixing bowl. Wlith large slotted spoon, beat yolks lightly. Add vanilla and sugar. Mix well. Add cocoa, by slowly sifting it in (very important). Cream together very smoothly. Beat egg whites until peaks form, but not too stiff. Fold gently into cocoa mixture. pour into ungreased springform pan. Bake at 350 for 35 - 40 minutes. Test with skewer or toothpick. Let cake set until center falls in and cake is completely cool. Remove band after first loosening along sides with a knife. Do NOT try to pull away from pan bottom. Remove pan band only.
- Combine all filling ingredients and beat stiff. Pile into center of cake. Decorate with curls shaved from semi-sweet chocolate. Chill at least 6 hours or overnight.
