Cran-Blueberry Apricot Bread

- 1 cup unbleached all-purpose flour shopping list
- 1 1/2 cup whole wheat flour shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 1/2 cup brown sugar shopping list
- 2 tsp vanilla extract shopping list
- 1 1/4 almond milk shopping list
- 1 tsp cinnamon shopping list
- 1/2 tsp nutmeg shopping list
- 1/2 tsp cloves shopping list
- 1/2 tsp salt shopping list
- 1 cup fresh blueberries shopping list
- 1/2 cup dried apricots, chopped shopping list
- 1/2 cup dried cranberries shopping list
- 1 overripe banana shopping list
How to make it
- Preheat oven to 350 degrees Fahrenheit. Grease a loaf pan with cooking spray, set aside.
- In a large bowl, mix all the dry ingredients together.
- In a small bowl, mash banana with a fork. Mix in brown sugar, vanilla extract and almond milk.
- Transfer banana mixture into large bowl, add spices (don't over-mix).
- Gently stir in fruit, and transfer to the loaf pan.
- Bake for 45 minutes. Bread is done when a knife stuck in the middle comes out clean.
