How to make it

  • Heat a wok or large frying pan with a bit of olive oil.
  • Add onions and garlic once the pan is hot.
  • Add the harder vegetables (i.e. carrot) first as it takes longest to cook.
  • Drain and rinse both types of beans very well - to remove excess salt.
  • Add remaining ingredients and spices and mix thoroughly for about 10 minutes.
  • If dry - add a bit of water and continue to mix and reduce heat.
  • Serve with tortillas, cheese and lettuce, guacamole and salsa!
