Tomato-topped Cod

- 1-1/2 cups water shopping list
- 2 tablespoons lemon juice shopping list
- 1-1/2 pounds cod fillets shopping list
- pepper to taste shopping list
- 1 small onion, finely chopped shopping list
- 2 large tomatoes, sliced shopping list
- 1/2 cup green pepper, chopped shopping list
- 1/2 cup seasoned bread crumbs shopping list
- 1/4 cup grated parmesan cheese shopping list
- 1/2 teaspoon dried basil shopping list
- 1 tablespoon olive oil shopping list
How to make it
- In a bowl, combine the water and lemon juice.
- Add Cod fillets, soak for 5 minutes.
- Drain and place fish in an 11x7x2 inch baking dish coated with non-stick cooking spray.
- Sprinkle with pepper.
- Layer with onion, tomatoes and peppers.
- Combine bread crumbs, parmesan cheese, basil and oil.
- Sprinkle over top the Cod fillets.
- Bake, uncovered, at 375 degrees for 20-30 minutes or until fish flakes easily with a fork.
