Tomato-topped Cod Recipe
If you have fresh fish, this is a great way to make it moist and flavorful. I never used frozen, but I guess it would work.

Ingredients
  • 1-1/2 cups Water
  • 2 tablespoons Lemon Juice
  • 1-1/2 pounds Cod fillets
  • Pepper to taste
  • 1 small onion, finely chopped
  • 2 large tomatoes, sliced
  • 1/2 cup green pepper, chopped
  • 1/2 cup seasoned bread crumbs
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon dried basil
  • 1 tablespoon olive oil

Directions
  1. In a bowl, combine the water and lemon juice.
  2. Add Cod fillets, soak for 5 minutes.
  3. Drain and place fish in an 11x7x2 inch baking dish coated with non-stick cooking spray.
  4. Sprinkle with pepper.
  5. Layer with onion, tomatoes and peppers.
  6. Combine bread crumbs, parmesan cheese, basil and oil.
  7. Sprinkle over top the Cod fillets.
  8. Bake, uncovered, at 375 degrees for 20-30 minutes or until fish flakes easily with a fork.
