I Can't Believe This Is Vegan! Bolgenese Sauce

- 1 lb of tofu bulk sausage (such as Lightlife GimmeLean bulk sausage) shopping list
- 1 Tbsp olive oil shopping list
- 1/2 onion, finely chopped shopping list
- 1 small carrot, finely chopped shopping list
- 1 stalk celery, finely chopped shopping list
- 1 baby belle mushroom, finely chopped shopping list
- 3 cloves garlic, thinly sliced shopping list
- 1/4 red pepper, finely chopped shopping list
- 1 Tbsp basil shopping list
- 1 Tbsp oregano shopping list
- 1 tsp thyme shopping list
- 1 large can crushed tomatoes (28 oz) shopping list
- 1/2 cup water shopping list
- 1 Tbsp sugar shopping list
- 1 Tbsp balsalmic vinegar shopping list
- plus: 1 tsp basil, 1 tsp oregano, 2 cloves of garlic pressed shopping list
- salt and pepper to taste shopping list
How to make it
- Saute onions, celery, carrot, mushroom and sliced garlic in olive oil until soft. (About 4 minutes.) Season with salt and pepper. Add "sausage" and 1 Tbsp basil, oregano and thyme. Stir into vegetables and crumble until resembles loose ground meat. Cook about 5 minutes or so. Add remaining ingredients (including remaining 1 tsp basil, oregano, and pressed garlic) and simmer 20 minutes. Serve over noodles.
