How to make it

  • Cut potatoes into cubes.
  • Into a large bowl, grate onion using small grate; drain off liquid. peel rinse (to remove starch) and dry potatoes and grate them into same bowl with onion using a large grate. Or you can use a Cuisinart. Add egg, flour, salt and pepper and mix well. Heat oil in a large frying pan to a depth of about 1/2-inch. When hot, drop large spoonfuls of the potato mixture into the oil, 3 or 4 at a time. When underside of each pancake is very brown and crisp, it can be turned. Remove each pancake to paper towels to drain, and keep them warm in the oven while you make the rest. Don't be alarmed if the mixture turns brown; it will lighten when it is cooked.
