Ganache / Mousse!

- 500 g dark chocolate, or 625g milk/white chocolate finely chopped (or chips) shopping list
- 500 mL cream shopping list
- 1T corn syrup shopping list
- vanilla, coffee, cointreau, kirsch, Frangelico, any flavoring desired. shopping list
How to make it
- Boil 250mL cream with corn syrup.
- Pour over chocolate and let sit for around 3-5 minutes
- Gently stir with whisk until incorporated. Voila, Smooth Glossy Ganache!
- Let sit until room temp
- MEANWHILE.... whip up cream (sometimes i use a packet of whip it too, this works well when you are using the mousse as a filling for a cake!)
- When ganache is cool, fold into whipped cream with whisk and pour into ramekin/bowl/pastry/whatever!
- Sets in about 25-30 minutes
