How to make it

  • Boil 250mL cream with corn syrup.
  • Pour over chocolate and let sit for around 3-5 minutes
  • Gently stir with whisk until incorporated. Voila, Smooth Glossy Ganache!
  • Let sit until room temp
  • MEANWHILE.... whip up cream (sometimes i use a packet of whip it too, this works well when you are using the mousse as a filling for a cake!)
  • When ganache is cool, fold into whipped cream with whisk and pour into ramekin/bowl/pastry/whatever!
  • Sets in about 25-30 minutes
