Red Beans And Rice

- 1 pound small red beans, dry shopping list
- 1 large onion, chopped shopping list
- 1 green bell pepper, chopped shopping list
- 1 red bell pepper, chopped shopping list
- 5 ribs celery, chopped shopping list
- 5-6 cloves garlic, minced shopping list
- 2 large smoked ham hock shopping list
- 1 pound andouille sausage, sliced on the bias shopping list
- 1 tsp. dried thyme leaves, crushed shopping list
- 1 or 2 bay leaves shopping list
- As many dashes Crystal hot sauce or Tabasco as you like, to taste shopping list
- A few dashes worcestershire sauce shopping list
- creole seasoning (your favorite brand) shopping list
- salt to taste shopping list
How to make it
- Soak the beans overnight, drain
- Cover with water and bring to a boil
- Cover, reduce to simmer, for 1 hour until tender added water as needed. The beans should start break down and get creamy. If not use a hand blender to help it along.
- While beans are simmering, saute the onions and peppers until translucent in some olive oil.
- Add the garlic and andouille sausage to the veggies and saute for 5 more minutes.
- Add to the cooked beans
- Add remaining ingredients
- Simmer for 2-3 hours, adding water as need.
- Remove and shred the hamhocks, returning the meat to the pot.
- It should be thick and creamy.
- Serve over white rice
- If you let the beans rest overnight, the flavors will be even better. You may have to thin it with some stock or water to serve
