How to make it

  • Peel and core the pineapple. Cut into chunks
  • Rinse your rice.
  • In a large pot over medium high heat add the water, the rice and the pineapple chunks.
  • Boil until the rice is very tender about 40 minutes, being careful not to let water run out and replenishing it as needed.
  • When rice is tender, turn off heat and let this mixture cool down before blending.
  • Using an immersion blender, blend the mixture until smooth.
  • You can also use a blender and add the mixture in portions until all the pineapple and rice is pureed.
  • After you are done blending it.
  • Take the juice and pass it through a sieve, discarding anything that has not blended.
  • Put the juice in a nice pitcher and add the sugar(add more to taste), stir.
  • If mixture is too thick add more water.
  • Put this juice in the refrigerator.
  • Serve VERY COLD!!
