Creole Honey Cake

- 2 sticks butter shopping list
- 4 eggs shopping list
- 3 cups flour shopping list
- 1/2 tsp salt shopping list
- 1 cup chopped fruit, your choice (I like fresh figs!) shopping list
- 1 cup honey shopping list
- 1 1/2 tsp lemon juice shopping list
- 2 1/4 TBS baking powder shopping list
- 3/4 cup pecans, chopped shopping list
How to make it
- Preheat oven 350.
- In medium saucepan melt butter with honey. Remove from heat.
- Mix well and add slowly the eggs and lemon juice. Combine the flour, baking powder and salt; add to the mixture. Add the chopped fruit and pecans to the batter. The batter will be stiff. Pour into a greased and floured baking pan. Bake 30 minutes or until a toothpick comes out clean.
