Tilapia With Zucchini And Green Beans

- 2 lbs tilapia fillets shopping list
- 1 large onion, sliced thin shopping list
- 4 medium zucchini, sliced shopping list
- 3 cans (10 oz) cut green beans, drained shopping list
- 2 tbsp margarine or butter shopping list
- 2 tbsp dried oregano shopping list
- salt and pepper to taste shopping list
- 1 cup shredded cheese (mozzerella or mozza and cheddar mix) shopping list
How to make it
- In a large nonstick skillet saute the onion, zucchini and oregano in butter or margarine until onion is tender, about 5 minutes. Add the green beans and mix in.
- Lay the fish fllets over the vegetable mixture and sprinkle with salt and pepper. Reduce heat, cover and simmer 10 minutes.
- Turn fish and sprinkle again with salt and pepper, cover and continue to simmer 7-8 minutes unil fish flakes easily with a fork.
- Sprinkle with cheese, cover and let stand for 2-3 minutes or until cheese is melted.
