Oatmeal Cake

- 1 1/2 c boiling water shopping list
- 1 c quick oats shopping list
- 1 c butter, room temperature shopping list
- 1 c white sugar shopping list
- 1 c brown sugar,lightly packed shopping list
- 2 eggs shopping list
- 1 1/3 c all purpose flour shopping list
- 1 tsp baking soda shopping list
- 1 tsp cinnamon shopping list
- 1 tsp vanilla extract shopping list
- pinch pepper shopping list
How to make it
- Grease a 9 x 13 pan. Pour boiling water over oats, cover and let stand for 15 mins.
- Cream together both sugars with the butter, add eggs one at a time till well mixed.
- Stir together flour, soda, cinnamon and pepper. Add to butter mixture alternately with the oat mixture.Pour into pan. Bake 25 mins

- Topping:
- 3 tbsps butter
- 1 cup chopeed nuts, optional
- 3/4 cup brown sugar, 3 tbsps milk,
- Mix together , spoon over hot cake and bake for approx 10 - 15 mins till bubbly.
- If you find that the butter is too hard to mix with the milk just soften in the mocrowave.
- It doesn't matter if it is melted a little but do not melt completely.
