Stuffed Pork Loin

- 1 whole pork loin about 7 1/2 - 8 lbs shopping list
- 4-6 slices of diced French brioche bread shopping list
- 1/2 red pepper diced shopping list
- 1/2 yellow pepper diced shopping list
- 1/2 orange pepper diced shopping list
- salt/pepper to taste shopping list
- 1/4 cup diced sun dried tomatoes (I use my home made ones) shopping list
- 3 cloves of garlic minced shopping list
- 1 can of vegetable stock or you can use stock cubes shopping list
- 1 tablespoon italian seasoning or herbs of your choice shopping list
How to make it
- 1. Preheat oven to 350 degrees f
- 2. Wash the pork loin and lay on counter and then take a knife on one side and butterfly it you can tenderize with a meat malet
- 3. Mix the diced bread, peppers, salt/pepper, tomatoes, garlic,stock and seasoning in a bowl and just let sit for awhile until the stock soaks in
- 4. Then place the dressing down the center of the pork loin and then take butchers string and place under the loin and then starting from the middle tie them up securely and cut off excess string and when all down place the loin in a large baking dish and cover with foil
- 5. place in the oven and bake for about 45 minutes and then turn the loin and remove the foil so it can brown and then place back in the oven and cook until done maybe another 30 minutes depending on your oven
- 6. Then remove from the oven and place on a cutting board and then rest for awhile and cool down and then cut of the string and slice
