Marinated Mushroom,Artichoke,Tomato Salad

- 1 pkg. frozen or canned artichoke hearts,cooked and cut in half shopping list
- 1 lb. fresh mushrooms,cut in half shopping list
- 3/4 c water shopping list
- 1/2 c red wine vinegar shopping list
- 1/4 c canola oil shopping list
- 1 garlic clove,minced shopping list
- 3/4 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 1/2 tsp thyme shopping list
- 1/4 tsp oregano shopping list
- 1 bay leaf shopping list
- 3/4 lb cherry tomatoes,halved shopping list
- chopped parsley shopping list
How to make it
- Combine the mushrooms with the cooked,drained ,cut artichokes.
- In a seperate bowl,mix water,vinegar,oil,garlic and seasonings. Pour over mushrooms and artichokes and toss lightly. Cover mixture and refrigerate to marinate(at least 24 hours). At serving time,place mixture on bed of lettuce. Add cherry tomatoes and sprinkle with chopped parsley.
