Ingredients
  • 1 Round Pumpkin
  • 2 Tins Asparagus
  • 1 Tin Sweetcorn
  • 2 Cups Grated Cheese
  • Salt and Pepper to season
  • leftover Vegies (if available)

Directions
  1. Wash the Pumpkin, and slice off a lid.
  2. Scoop out the seeds, replace the lid, and spray or rub with oil. Place on a baking tray and cook until tender, but not soft (about half an hour) at 180 degrees.
  3. Cook slightly, then scoop out some of the cooked pulp.
  4. Drain Asparagus and Corn and mix with the pulp and two cups of grated Cheese. Add salt and pepper to taste.
  5. You can then add leftover Vegies if you have some in the fridge. Fill the pumpkin with the mixture, replace the lid and back at 170 degrees for 1 hour.
