New Mexico Enchiladas

- 2 corn tortillas, per serving shopping list
- El Pato sauce (mexican tomato sauce) shopping list
- cheese, shredded shopping list
- onions, small dice shopping list
- 1 egg, per serving, fried shopping list
How to make it
- Preheat oven 350.
- Dip 1/2 tortillas in El Pato and place on baking sheet. Top with cheese and onions. Dip the other half of tortillas in El Pato and place on top of each prepared tortilla. Top with more cheese and onions.
- Bake until cheese is melted and enchiladas are heated through. Remove from oven when ready to serve and top each serving with a fried egg.
- Serve with El Pato poured on top of each serving.
