How to make it

  • Trim the beets and use the greens in another dish.
  • Wash the beets well, place in roasting pan with 1⁄2 cup water and cover with aluminum foil.
  • Bake at 350 degrees until tender, but not soft (about 1 hour). Cool, and then peel the skin.
  • Retain 1⁄4 cup of liquid from the pan and mix with remaining ingredients. Cook over medium heat 4 to 5 minutes or until syrupy.
  • Cut the beets into medium sized cubes and toss with the glaze. Serve warm or cold.
