Company's Coming Chicken

- 4 bone in, skin on split chicken breasts shopping list
- salt and pepper shopping list
- 1 Tbsp vegetable oil shopping list
- 1 red pepper ,chopped fine shopping list
- 1/2 c onion, chopped fine shopping list
- 1 clove garlic, minced shopping list
- 1/2 tsp curry powder shopping list
- 1 c chicken broth shopping list
- 1 c orange juice shopping list
- 1 Tbsp cornstarch shopping list
- 3/4 c pitted dates, finely chopped shopping list
- 1 can(s) 11oz can mandarin oranges, drained shopping list
- 1 Tbsp chopped fresh cilantro or parsley shopping list
How to make it
- Season the chicken with salt and pepper. Heat 11/2 tsps oil in a dutch oven.Cook the chicken until brown on both sides. Transfer to a plate and discard the skin.
- Heat the remaining 1 1/2 tsps oil. Cook the pepper, onion and 1/2 tsp salt and cook till vegetables are softened.. stir in garlic and curry powder and cook until fragrant. Stir in broth scraping up any brown bits.
- Return breasts to pot and simmer, covered, and cook till done approx 20 - 25 mins. If you have a meat thermometer check the chicken, it should read 165 degrees. Remove chicken to a dish and cover loosely with foil.
- Mix the orange juice and cornstarch together in a bowl. add the juice mixture and the dates to the pot and simmer stirring constantly until sauce is thickened. remove from heat and stir in oranges and cilantro. season with salt and pepper. Pour sauce over chicken and serve.
