Cheesy Spinach Pasta

- 1kg pasta shopping list
- water shopping list
- 500g spinach shopping list
- 50g pine nuts shopping list
- salt and pepper to taste shopping list
- [section] For the sauce [section] shopping list
- 500ml milk shopping list
- 1tsp nutmeg shopping list
- 50g Parmesan shopping list
- fresh basil (chopped fine) shopping list
- salt and pepper to taste shopping list
How to make it
- Pre heat the oven to 180c/gas mark 4/356f
- [section] For The Pasta [section]
- Put your pasta in a large pan and add your water. Boil on a medium to low heat until cooked then drain off the pasta. You might want to leave a tiny bit of liquid in for the spinach. Leave off the heat.
- Add the spinach, a bit at a time, until it wilts due to the pasta being piping hot. Complete by adding the pine nuts and stir it all in.
- [section] For The Sauce [section]
- While the pasta is cooking, mix the nutmeg and basil in with milk and bring to the boil on a low heat (this is to stop the milk from burning the pan). Take the pan off the heat and add half your parmesan. Return to the heat until the parmesan has melted and the sauce has thickened. Pour this over the pasta and stir in.
- Place the sauced pasta in a casserole dish and sprinkle over the rest of the parmesan and place in the oven for 30 minutes until the parmesan has browned.
- Serve with garlic bread.
