Braised Beef With Tomatoes And Herbs

- 3 pounds Bastrop Cattle Company chuck steak - cut into 1/2 inch cubes shopping list
- salt & pepper shopping list
- cayenne to taste shopping list
- 3 Tbsp. olive oil shopping list
- 1 bay leaf shopping list
- 2 Tbsp. minced garlic shopping list
- 1/4 cup flour shopping list
- 1/2 lb. onions - chopped shopping list
- 1 cup dry red wine shopping list
- 1/2 lb. mushrooms shopping list
- 24 pitted, stuffed green olives (optional) shopping list
- 2 cups roasted tomatoes shopping list
- 1/2 tsp. thyme shopping list
- 1 1/4 cup finely chopped parsley shopping list
How to make it
- Cut up meat and sprinkle with salt and pepper. Heat oil in large skillet, add beef and cook, stirring often. Add garlic, onions and mushrooms and stir. As onions turn translucent, sprinkle mixture with flour and stir to coat evenly. Add wine, tomatoes, olives, bay leaf, thyme, cayenne, salt and pepper.
- Cover and simmer on low heat for 1 1/2 hours. Sprinkle with parsley and serve.
