Emerald Salad

- 2 TBS gelatin shopping list
- 1 cup cold water shopping list
- 1 cup sugar shopping list
- 1/2 cup water shopping list
- 1/2 cup vinegar shopping list
- 1 med size can crushed pineapple, with juice shopping list
- 1 cup nuts, finely chopped shopping list
- 1 cup sweet pickles, sliced thin (or diced) shopping list
- 1/2 cup celery, chopped shopping list
- dash onion juice, if desired shopping list
How to make it
- Dissolve gelatin in cold water and soak 5 minutes. Cook sugar, remaining water and vinegar to a thin syrup. While hot, but not boiling, add gelatin mixture and stir until dissolved. When it begins to set, add pineapple, nuts, pickles, celery and onion juice. Let set for 2 hours. Serve on lettuce bed with mayonnaise.
